Huntercombe Maidenhead is in Taplow, within 1/2 mile of junction 7 of the M4, two miles from Maidenhead and six miles from Windsor. The hospital is set in a 13th century manor house with extensive gardens, we look after children and young people aged 12 to 18 years with mental health needs. We are a Tier 4 Child and Adolescent Mental Health (CAMHS) hospital.
We are recruiting a full time Chef to carry out duties to the required standards as efficiently and effectively as possible as part of the production team, to provide a high quality service providing safe and nutritious food to patients, staff and visitors in compliance with the Food Safety Regulations. This post requires good communication skills.
Key Accountabilities:
* In the absence of the Head Chef, to be responsible for the Catering Department as designated.
* To be able to work mainly on own initiative and unsupervised adhering at all times to procedures and complying with the food safety regulations.
* To train and mentor new members of staff and supervise catering staff in the absence of the Head Chef.
* To receive and store food and other goods, ensuring they are of the required specification and quality.
* To ensure the correct portioning, labelling and packaging of food items in line with food safety standards.
* To prepare, cook and store meals for patients, staff and hospitalities and theme days in accordance with standardised recipes and all preferences relating to dietary requirements, food allergies and intolerance’s.
* To complete daily quality report sheets to include all food cooking & chilling and equipment temperatures and report any untoward issues to the Head Chef.
* To make the most efficient use of provisions and equipment to minimise waste.
* To participate in the loading of food trolleys, probe food items and record temperatures.
* Monitor dining room food service and replenish meals to ensure sufficient food is available throughout service.
* To adhere to and maintain all set standards and follow appropriate policies and procedures to include duty rotas, standardised recipes to comply with food safety standards.
* To receive telephone calls and in person requests, issue supplies and record all outgoings.
* To work in a methodical, organised manner to ensure all preparation workstations are kept clean and safe at all times.
* To adhere to THG’s and departmental set codes of practise on hygiene and maintain a high standard of personal hygiene.
* To report any sightings of pest to Head Chef.
* To wear appropriate approved protective clothing provided in accordance with role and food hygiene policy.
* To safely operate and report all faulty equipment to Head Chef.
* To undertake training sessions to update skills, knowledge and good practice in accordance with the level of work activity and responsibility.
* To attend staff meetings as appropriate.
* To inform and seek advice from Head Chef should any concerns arise which may affect the smooth running of the department.
* To carry out all duties, adhering to manual handling and lifting procedures/practice.
* To receive and communicate information effectively to all levels of personnel.
* To promote a positive and professional image of the catering services and offer advice on Food Production issues as appropriate.
This is a full time role working 37.5 hours per week.
The pay rate is £10.78 per hour
